So we're going to make a batch of mead. I have a gallon of wildflower honey I just never got around to fermenting, so I'm giving it to him. We'll make 5 gallons and bottle it up in pint bottles after a year or two and then open the first bottle on his 21st birthday. This will be the greatest excercise in patience I have ever attempted in my meadmaking. I figure he can open a bottle every year for his birthday (and hopefully share with me!) for the next 40 years. That will likely (barring some accident) time out well for me and maybe leave him a few bottles when I'm gone, too. Hopefully this will keep him from the typical 21st birthday obliteration. Quality, not quantity. Yeah, do as I say, not as I do. Typical dad stuff.  |

Well, we went to Universal Islands of Adventure in Orlando, where it was damp and cold on that saturday. That sunday (his birthday) I was down like any boxer up against the "Pac-Man". The following sunday, he had my sickness... Anyway, we made it today. It was a nice dark honey and made a really nice-smelling 28Brix mead must. We pitched Lalvin EC 1118.   Say, are pictures turned off?? |

I love the second set of pics. The fermentation process looks really gross that close up. It's amazing the wonderful mead that you will have afterwards, though. |

Just about time to rack. I think it's pretty well done already, which surprises me since we did no nutrients. I'll have a taste at racking and see how it's doing and I'll be sure to post.

I really am going to steal this idea. Me boyo has helped me brew to a limited extent and we've made root beer a couple times. I really think this will be a great idea. I will live on in his memory if we do this year to year thing though...  |

Well, the 1118 yeast dried this mead right up. We racked a few nights ago and tasted. Whooo! dry and alcoholic! I am assuming that 2.75 more years will help, but I told him we'd make a really sweet mead sometime along the way to blend with because he wanted a little sweetness. This can also add to the volume which ran a bit shorter than I thought at just over 3 gallons at racking. Interesting flavor. Very earthy. Maybe even over the top earthy. We'll see. |
